If you’re planning to go from stove to oven, there are several things that you need to be aware of when buying oven-safe cookware.

  • Cookware Material – The best oven proof materials are cast iron, stainless steel, copper, aluminum, ceramic, or a combination of these materials.
  • Coating – The nonstick coating of the cookware can limit its heat-resistance. Very high temperatures can affect the lifespan of ceramic and enamel coatings so they should be limited to temperatures between 450 to 500°F. Seasoned cast iron cookware is slightly more tolerant to high heat, being safe up to 500°F. As for Teflon or PTFE coating, it should never be used above 500°F since it will start to emit toxic gases.
  • Handle Material – Companies often equip their products with handles that don’t get hot easily for safety. However, these types of handles often bring down the oven temperature rating. For example, stainless steel and cast iron handles are safe up to 500°F. But, they get hot so manufacturers use silicone insulated handles which are safe up to 350°F to 482°F. Bakelite handles are even less heat-resistant, being rated only up to 350°F.
  • Detachable Handle – To solve the problem posed by the handle material, some companies manufacture oven-safe cookware with detachable handles to take them out of the equation when in the oven.
  • Oven Proof Lids– Lids with plastic knobs can melt at high temperatures. One remedy to use with existing skillets is to replace the plastic knobs with stainless ones to make them oven-safe.

What We Liked About this Frying Pan

Not only is it suitable for most types of cooktops, we love that it has a high oven-safe temperature of 480°F, good enough to handle most recipes. Another feature that makes this a great product is its dual-riveted stainless steel handle which stays cool when used on a cooktop. We also find the addition of the small hole in the handles a nice touch. Instead of nesting the pans which can scratch their ceramic interior, we can hang them when they’re not in use.

What We Didn’t Like So Much

The handles get hot if you use them in the oven. But, this is very common and easily solved by using mitts. We also don’t like that the handles feel sharp to the hands.

It’s one of the most versatile pieces we’ve tested, being compatible with all heat sources including a campfire and, of course, the oven. This cast iron skillet can handle temperatures more than any kitchen can ever produce. The 500°F rating is mainly for the seasoning which can disintegrate at very high temperatures.

According to one review, she uses the Lodge so much for cooking and baking that she just leaves it on her counter after washing. And, speaking of washing, we love that once the Lodge is properly seasoned, it’s nonstick and very easy to clean. Even better, the Lodge is budget-priced and can last so long you can make it your family heirloom.

What We Didn’t Like So Much

Just like all cast iron skillets, the Lodge is heavy and might not be suitable for you if you have trouble lifting heavy things. Also, since the handle is cast iron, you’ll have to be careful not to burn your hands.

We also love that this vibrant piece can be used to serve the food. This means less kitchenware to wash, saving you time and energy.

What We Didn’t Like So Much

At 13 pounds once assembled, the Bruntmor is very heavy. This means that if you have a condition that makes it hard for you to lift heavy things, this isn’t the cookware for you. Plus, this tandem isn’t completely nonstick, so you’ll still need to use a bit of oil and proper temperature control to prevent food from sticking.

What We Liked About this Frying Pan

For people who can’t lift heavy cookware like the Lodge and Bruntmor, we highly recommend the ICON Carbon Steel Skillet as your go-to oven-proof cookware. It is only 4.6 pounds and is very similar to Lodge in terms of oven-safety. You can use it at extremely high temperatures of up to 800°F, but the seasoning will get burned off. In that case, you can just re-season the pan. Still, most recipes only require 500°F at maximum.

Other things we love about the Icon include its durability, nonstick properties once properly seasoned, and ability to heat up fast. As one user had commented, it’s a little high maintenance in that it needs to be seasoned every now and then, but it’s worth it. We’re also impressed by the 25-year consumer warranty which would make any buyer feel secure about the product they’re buying.

What We Didn’t Like So Much

Just like most stainless steel handles, the Icon’s handle gets hot when used in the oven. You have to be careful about sudden temperature changes as well since it can warp this skillet. Finally, the Icon is the most expensive product on our list, but we don’t mind paying a little extra for a product of this caliber.

What We Liked About this Frying Pan

When it comes to Teflon-coated oven-safe cookware, the Almond Aluminum Skillet is our top pick. Though it has the lowest maximum oven-safe temperature out of all the products on our list, 450°F is still high enough to handle most of your baking needs. Plus, unlike the Cooker King, the Almond comes with a vented glass lid that’s rated up to 500°F. One satisfied buyer that she was able to make chicken parmesan from the stove to the oven with great success.

Of course, since the coating is Teflon, nothing sticks and it’s very easy to clean. As long as you don’t exceed the temperature indicated on the manual, it’s very safe to use. We also like the handle of the Almond better than the Cooker King. It stays cool and is designed to be easy to grip.

What We Didn’t Like So Much

Some people dislike that there’s a slight dome in the center of the pan. This means that the liquids stay at the edge when you’re cooking. For us, however, this can be a good thing since the food won’t be as oily.

Protecting Skillet Handles Past Their Oven-Safe Temperature

If you have a piece of cookware that a low oven-safe temperature because of its handle, Cook’s Illustrated has an easy workaround.

  • Wrap the handle in two layers of wet paper towels.
  • Cover the paper towels with two layers of foil.

Because of the water in the paper towels, the handle won’t get hotter than 212°F which is the boiling point of water. According to the tests they’ve done, this method can keep the handle below 350°F for 30 minutes in a 450°F oven and more than an hour in a 425°F oven.

Remember, even if the layers of paper towel and foil can keep the handle at a lower temperature, it will still be too hot to touch. Make sure to use mitts when taking out the cookware from the oven.
